Bread rises because tiny living organisms called yeast produce carbon dioxide (CO₂) gas during fermentation. The gas gets trapped inside the dough’s stretchy gluten network, creating thousands of tiny air pockets that make the dough expand. During baking, the heat causes these gas bubbles to grow even larger before the yeast dies, resulting in a light, fluffy loaf.

How the process works

  1. Yeast is activated
    • Yeast is mixed with flour, water, and often a little sugar.
    • It feeds on sugars naturally present in the flour.
  2. Fermentation begins
