When you cut or bruise fruits like apples, bananas, pears, avocados, and peaches, they often turn brown within minutes. This happens because of a natural chemical reaction called enzymatic browning.

How Fruits Turn Brown

1. The Fruit Is Cut or Bruised 🔪

When the skin is broken, the inside of the fruit is exposed to oxygen in the air.

2. Enzymes Meet Oxygen 🌬️

The fruit contains an enzyme called polyphenol oxidase (PPO). Once exposed to oxygen, this enzyme reacts with natural compounds called polyphenols.

3. Brown Pigments Form 🟤

The reaction produces new compounds that join together to form brown pigments called melanins, making the fruit appear brown.

Why Do Fruits Brown?

Browning is part of the fruit’s natural defense system. It helps protect damaged tissue from bacteria, fungi, and insects.

How to Prevent Browning

  • 🍋 Use lemon or lime juice: The acid and vitamin C slow the reaction.
  • ❄️ Keep fruit cold: Refrigeration slows enzyme activity.
  • 💧 Soak in cold water: Reduces contact with oxygen for a short time.
  • 🍯 Coat with honey water: Honey contains natural compounds that can help slow browning.
  • 📦 Store in an airtight container: Limits oxygen exposure.

Does Brown Fruit Mean It’s Bad?

Not necessarily. Browning usually affects the fruit’s appearance more than its safety. As long as the fruit isn’t moldy, fermented, or giving off a bad smell, it’s generally still safe to eat, although the texture and flavor may gradually change.

Fun Facts

  • 🍎 Apples can begin browning in less than 10 minutes after being sliced.
  • 🥑 Avocados and bananas brown for the same basic reason.
  • 🧬 Scientists have developed some apple varieties that brown much more slowly.
  • 🍍 Fruits like pineapple and citrus fruits rarely brown because they are naturally more acidic.
