Why Popcorn Pops

Popcorn is one of the few types of corn that naturally pops when heated. Each popcorn kernel contains a small amount of water trapped inside a hard outer shell called the pericarp. This unique structure allows pressure to build until the kernel bursts.

How It Works

  1. Water heats up: Each kernel contains about 13–15% moisture.
  2. Steam builds pressure: As the kernel reaches around 180°C (356°F), the water turns into steam.
  3. Pressure increases: The hard shell traps the steam, causing pressure inside the kernel to rise to about 135 psi (930 kPa).
  4. Kernel explodes: Once the shell can no longer contain the pressure, it suddenly breaks open.
  5. Starch expands: The soft starch inside rapidly expands and cools into the fluffy white popcorn we eat.
